Want to make something a little different for a special occasion? These lemon and oregano lamb chops with a lime yoghurt sauce recipe is perfect.
- Mix together half of the olive oil, some salt, pepper, lemon zest, lemon juice and the chopped oregano in a small bowl. Rub the mixture on both sides of the lamb chops. Set aside for 10 minutes
- Heat a griddle pan on medium heat until hot and add the marinated lamb chops. Cook until lightly charred on one side, about 4/5 minutes. Turn them over and cook the other side until lightly charred and cooked. This will take about 8-10 minutes. Season with a little more salt and pepper
LIME YOGHURT SAUCE
- Place the rest of the olive oil, yoghurt, sour cream, garlic, lime juice and zest, chopped coriander and mint in the jug of your stick blender and blend to make a sauce.
- Season with salt and pepper.
Serve with the lime yoghurt sauce and lemon and lime wedges
